The First US Chapter

On 27 April 2026, Santori officially marked the beginning of its US presence with an extraordinary private dining experience hosted at Bar Moon in Houston, Texas.

Designed as a showcase of what Santori can create for its members, the evening brought together eight carefully selected guests for an experience centered around exceptional hospitality, world-class gastronomy, and meaningful connections.

More than a dinner, it was a statement of intent. A demonstration of what becomes possible when every detail is curated, every guest is chosen with purpose, and every element is executed without compromise.

Santori Arrives In Houston

The evening represented the opening of Santori's first chapter in the United States.

With its Texas headquarters now operational at 1000 Main Street, Suite 2300, Houston was chosen as the foundation for Santori's American expansion. Rather than launching through a public event, Santori elected to begin with a private gathering that reflected its values: discretion, exclusivity, and genuine human connection.

The objective was not to host the largest event in the room. It was to bring together the right people in the room.

A Venue Reimagined

Bar Moon does not open on Mondays.

On 27 April, it opened exclusively for Santori.

The venue was privately reserved in its entirety on its usual day of closure, creating an atmosphere unavailable to the public. There were no walk-ins, no public reservations, and no announcements. The space existed solely for the guests invited to attend.

The result was an intimate environment where every interaction felt personal and every detail felt intentional.

Twenty-Two Hospitality Experts

To deliver the experience, Santori assembled a team of 22 hospitality professionals across both front-of-house and back-of-house operations.

Every course, every cocktail, every table setting, and every guest interaction was carefully coordinated to ensure a seamless experience from arrival to departure.

The scale of the team reflected the standards behind the event. Nothing was left to chance.

A Michelin Heritage Kitchen

The culinary programme was entrusted to Bastion Events, a collective trained directly under legendary chef Joël Robuchon.

Four members of the team carry two Michelin stars each: Alain Verzeroli, Salvatore Martone, Olivier Jean, and James Friedberg. Supporting them were chefs whose own careers include Michelin-starred experience and internationally recognised expertise.

Collectively, it represented one of the most accomplished private culinary teams ever assembled for a bespoke event in Houston.

Every Detail Matters

Guests arrived to a bespoke cocktail experience where drinks were crafted to order by expert mixologists.

A custom Santori floral installation transformed the venue and immediately established the tone of the evening.

At the bar, caviar was finished à la minute on dry ice, creating a visual experience before guests even sat down. Throughout the evening, every element was designed not simply to impress, but to tell a story.

The experience demonstrated a core Santori principle: luxury is found in thoughtful details rather than excess.

Stories Behind The Menu

The evening's menu was built around craftsmanship and narrative.

Chef Marco introduced guests to a bread programme created from a five-year mother yeast, carefully maintained and developed over time. The story behind the ingredient became as important as the ingredient itself.

Each subsequent course followed the same philosophy, offering guests not only exceptional food but also insight into the people, techniques, and traditions behind it.

The evening encouraged conversation rather than presentation.

Exceptional Pairings Throughout

The wine programme began with Pol Roger Cuvée Sir Winston Churchill 2015 and evolved through a carefully curated series of pairings.

Sommelier Robin guided guests through each selection, sharing the stories of producers, vintages, and regions in a way that felt personal and engaging.

Highlights included bluefin toro paired with IWA 5 sake, stinging nettle risotto accompanied by Gaja Gaia & Rey 2021, and an impressive RC Ranch cowboy steak served alongside both Opus One 2017 and Château Pontet-Canet 2009.

Each pairing was designed to surprise and elevate the experience.

The Santori Butterfly

The final moment of the evening arrived with the unveiling of the Santori Butterfly.

As a smoke dome was lifted from the table, a bespoke cocktail prepared with Ki No Bi gin, yuzu juice, and raspberry cordial was revealed simultaneously.

The choreography between kitchen and bar created a memorable conclusion and demonstrated the level of coordination behind every Santori experience.

It was the perfect final gesture to close the evening.

Built In Seven Days

Perhaps the most remarkable aspect of the event was its timeline.

The decision to host the dinner was made just seven days before guests arrived.

Within a single week, Santori secured a private venue, assembled a Michelin-level culinary team, coordinated 22 hospitality professionals, created a bespoke wine programme, and delivered an experience that felt months in the making.

The event showcased not only Santori's standards, but also its ability to execute exceptional experiences with speed and precision.

People Above Everything

While the evening featured extraordinary cuisine, exceptional wines, and flawless hospitality, none of these elements were the true focus.

The experience was ultimately about the people in the room.

Every guest was selected intentionally. Every conversation mattered. Every detail existed to create an environment where meaningful relationships could form naturally.

This philosophy remains at the heart of Santori's approach to hospitality, travel, and community.

The Next Chapter Begins

The evening of 27 April was more than a private dinner.

It marked the beginning of Santori's long-term presence in Texas and across the United States.
